I definitely struggle to find good on the go snacks on AIP, so ya know what? If you can’t find it, make it! These are easy to put together and store. I give them a quick wrap in beeswax paper and store in the fridge. Pop them in your bag in the morning and you have a totally satisfying, body healing snack.

Here’s What You’ll Need,

  • Coconut Flour - 1/2 Cup

  • Unsweetened Shredded Coconut - 1/2 Cup

  • Unsweetened Cacao (At Least 70% Cacao) - 1/4 Cup

  • Dried Cranberries (Or Any Other Dried/Fresh Fruit) - 1/2 Cup

  • Collagen Powder - 1 Cup

  • Gelatin - 20g (Two scoops)

  • Coconut Cream - 1/2 Cup - I just take the top solid layer out of the can and save the liquid part for another recipe!

  • Pure Maple Syrup - 1/4 Cup

Mix all of the ingredients together and press into a 9x9 parchment lined pan and cool in the fridge. Then cut into grab and go pieces and you’re set!
