Remember the Sweet Potato Pumpkin Gnocchi? Well if you take that dough and press it into a waffle maker you’ve got one tasty brunch that everyone can get in on. You can use with your favorite pure, all natural maple syrup, OR I found Coconut Nectar, where has this been all my life?? It’s a very light sweetener with a low glycemic index which is perfect for us AIP’ers.

Recipe Reminder:

7.5 Oz Pumpkin Puree

3/4 Cup Sweet Potato Flour.

I loved the kiwi’s on top as the tanginess offset the sweetness. Great for a special treat! I topped with Coconut Nectar…..what is this magic???
