Cinnamon Maple Tapioca
Guess what…..tapioca is already gluten free, yay! With a few other tweaks you can make this tasty treat AIP compliant in no time….ok a little bit of time, but no more then normal.
Here’s What You’ll Need:
Tapioca Pearls - 1/2 Cup
Coconut Milk - 1 Can, Full Fat (Always double check ingredients for sneaky fillers!)
Pure Maple Syrup - 1/4 Cup
Vanilla Extract - 2 TBSP (Watch for gluten free!)
Cinnamon - 1-2 TBSP Based on preference
Vital Proteins Collagen - 2 Scoops (40g)
I mixed all of these ingredients together in a large jar and let soak overnight. The next day I poured into a pot and cooked on low to get a slight boil. Keep stirring until you see the pearls puff up and become translucent, about 10-15 minutes. Place back into clean jar and let setup in the fridge! At least a few hours. Serve! This is SO good with fresh fruit and makes a perfect sweet treat.
