Who here misses bread? Rice? Carbs? Yea…me neither……looks around, sigh. Okay, I do miss sushi, a lot. Zushi to the rescue! Nothing super fancy here, but it makes a great on the go lunch.

Here’s what yo'u’ll need:

  • One large zucchini hollowed out

  • Your favorite sushi fixin’s

    • I used King Crab, Avocado, Rainbow Carrot and Nori Wrap

  • Stuff, Slice and Eat!

  • Coconut Aminos is a great substitute for Soy Sauce, I’m still working on spicy mayo….

Hollow out the zucchini with a knife or special hollowing tool. You want to remove most of the inside, but enough to make sure you don’t crack the side, see pictures. Next, I take a whole piece of King crab and place in the middle, next the carrots and last the avocado. The avocado going last is important as is want to really smash it in to fill out any holes. The best way is to stand it up so the end is block then smash it in, gets a little messy, but fun! Wipe the outside the slice! Important that your knife is very sharp. Serve with coconut aminos!
