Citrus Beet Salad

Beets are by far my go-to veggie of choice. I don’t even mind that my kitchen looks like a crime scene each time I use them. Beets are packed full of nutrients that do wonders for all you AIP warriors out there. They help lower blood pressure, they help keep you going during exercise and they have detox effects that help with losing weight! Heeeeeeyyyyyy!

This is a pretty simple salad, with the right tools. Or you can do what I did with a veggie shredder and some elbow grease.

Here’s what you’ll need:

  • Two large beets, I prefer red as they have more flavor

  • Three Oranges

  • One Lemon

  • Olive Oil

  • Shallots

  • Grey Salt

Shred the beets into a bowl, take a zester and zest the outside of the oranges and lemon into the bowl. I just do the outer middle of the oranges and lemon, don’t need too much. Then cut and juice the fruit into the bowl, watch for seeds! I do a thin cut on just the greens of the shallots, about half the bunch. Drizzle with olive oil, roughly 1 TBSP and salt to taste! I love using Grey Salt because it’s a great source for electrolytes.
