Sweet Potato Pumpkin Gnocchi
This is easily the simplest dish that is guaranteed to impress, and it’s TWO ingredients
Pumpkin Puree - Half Can, about 7.5 oz
Sweet Potato Flour - 3/4 Cup
Mix together to form dough, I find it best to use my hands. Take little pieces, and roll into balls, about nickel size. I then roll down the side of a fork to get the classic gnocchi markings. Do a quick pan fry with a little bit of olive oil. You need to make sure to move the gnocchi every few seconds as they will burn easily. I serve with my Cauliflower Alfredo sauce and done! It’s a very filling dish so make sure you serve with some good veggies to balance it out!
