Fish Tacos
Who doesn’t love a fish taco? That’s what I thought….these are very quick and easy to make when you keep a few ingredients on hand. The first being my Peach Mango Salsa but since peaches are out of season, I subbed in apples, very fall harvest. I also keep a mix of coleslaw of cabbage and carrots that I soak in red wine vinegar, on hand. It’s a great way to add a fresh zing to lots of dishes. The tortillas are Cassava and Coconut flour (The original product I found was compliant but has since changed……so I’m on the hunt again…..sigh.) Pick up some fresh, wild caught cod and you’ve got a great meal!
I do a quick pan fry on the cod with a little bit of olive oil, salt and garlic powder. Once that’s done, I put to the side and do quick heating up of the tortilla on each side, only takes less then a minute. Plate the cod on the tortilla and top with the coleslaw, salsa and avocado.
