Winner, Winner, Chicken Dinner! Struggling to think of ideas for your upcoming holiday dinner? Or just dinner in general? Who wants light meat? Dark meat? Hey! guess what? You can have it all! All of these recipes are 100% AIP Compliant and absolute crowd pleasers. Super easy to prep and all of these dishes are put in the oven…..at the same time….at the same temperature, you’re welcome.

Let’s talk cornish game hens! These are a great way for everyone to get interactive with dinner and you don’t have to carve up a huge turkey, win! For this one I lifted the skin and put rosemary sprigs underneath then did a thin layer of salt and garlic powder, but have fun with any of your favorite AIP seasonings. I cook all of my poultry recipes low and slow as it makes them way more tender. For this game hen I put it in the oven, on convection, for one hour at 300 degrees.

If you’re trying to put together my entire Holiday Meal Menu, the Maple Bacon Carrots and Savory Sweet Potatoes can all go in to the oven at the same time at the same temperature. (Insert clever smile). If you don’t have a convection setting, I recommend just rotating the dishes every 20 minutes for an even cook.

Now……what about the gravy? My family is KNOWN for their gravy. We say that the meal isn’t over until the gravy is gone. However, with the thickening mix being flour based I have been on the hunt for a decent flour substitute that doesn’t make the gravy, grainy, yuck. Whelp…..just found it! I took the game hen drippings and strained into a sauce pan, added a few scoops of GT’s Cocoyo and lost my mind. This is it!!! I have been able to find this at several natural food markets in the area. I use this often as it’s got a nutty flavor instead of sweet so I highly recommend having this on hand.
