Prosciutto Wrapped Pork Tenderloin

Here's What You'll Need

  • One Pork Tenderloin (a 4 inch section is one serving size)

  • Prosciutto - About 12 slices

  • Coconut Aminos - 1 Cup

  • Minched Garlic - 4 TBSP

The prep for this is just to get the tenderloin marinating. I like to do it the night before, typically when I’m doing other dinner prep. Place the tenderloin is a glass dish, preferably one where it’s pretty tightly packed. Pour the coconut aminos and garlic over top, seal and let rest. If you can do this at least an hour before hand that’s ok too. When you’re ready, preheat your oven for 350 degrees. Lay the pork tenderloin on a sheet of parchment on a small baking tray. Start laying the prosciutto over top. I did a zig zag pattern because…well…I'm fancy, but go nuts with your own version. Once everything on top is laid, carefully roll the side edges under the tenderloin. Pour the remaining marinade over top and pop into a 350 degree oven for roughly 30 to 45 minutes.

I like to use a cooking alarm for this that goes off the second the internal temp reaches 145 degrees. Pork can dry out really quickly, so once it reaches that temp, be ready to slice and serve
