Mushroom Asparagus Side Dish

Mushrooms are an amazing super food. They are a cancer fighter, an anti-inflammatory and packed with tons of thyroid supporting vitamins. However, they aren’t always everyone’s cup of tea. So here are a few pro tips and tricks I’ve gathered to bring out the best flavor while balancing out the mushroom-y texture.

Start of with a large dry pan so the mushrooms have enough room to spread out with minimal touching. On a medium heat start cooking the mushrooms, making sure to keep them moving so they don’t burn. This will naturally start pulling the water out of the mushrooms. At this point you can pull the mushrooms out of the pan if you’re trying to use in another recipe, this way it won’t end up being sour!

For the recipe shown, I added AIP compliant prosciutto and asparagus as a side dish for my Cornish Game Hens. Once the mushrooms start to sweat I added in the small chopped pieces of prosciutto and continue to stir as the prosciutto browns. I shake in a little bit of garlic powder and continue to stir. I then add in my stocks of asparagus and stir the mushroom and prosciutto mix over top, now cover! It’s important to trap that moisture in so all the flavors start to meld together. Stir the mix frequently for the next ten minutes and cover again each time. Once the asparagus is soft, it’s ready!

This is an easy dish to mix and match different veggies to make sure you’re getting a variety of nutrients with each meal.
