Green Apple and Fennel Salad

To say that Fennel is beneficial would be a huge understatement, it's going to be the next superfood, just wait. While it has so many benefits, the biggest overall impact of fennel is heart health. From lowering cholesterol to regulating blood pressure, this is a great veggie to incorporate into your meal planning. This salad that can be prepped ahead of time, because as it’s allowed to sit, all of the flavors are able to meld together.

Overall, it’s a pretty easy assemble, just lots of slicing! If you haven’t invested in a mandolin, I would. Several of my recipes use this chopping method and it makes for a more even end result. Okay…

Here's What You'll Need:

  • Fennel - One large bulb, cleaned, stems removed.

  • Green Apple - Two! Very important its green as you want that bright flavor.

  • Lime Juice - 2 TBSP

  • Coconut Yogurt - 1/4 Cup ( I prefer Cocoyo, as its nice a tangy!)

  • Garlic Powder - 1/2 TBSP

  • Salt - 1/2 TBSP

I cut the fennel bulb in half and slice the entire thing on a medium cut on my mandolin. Place in mixing bowl. I place the whole apple, bottom down on the mandolin and slice on a medium cut. I then cut them in half and used a melon baller to removed the middle core. Place quickly in the mixing bowl and toss in lime juice. It’s important to do that part quickly so the apples won’t start oxidizing. Mix in all the other ingredients! That’s it! I chopped up a bit of the fennel top for effect, but it's not necessary. Feel free to play with your seasonings, remember you can always add, but you can’t take away! Place in the fridge for at least 30 minutes before serving, it just gets better!
