Tropical Chicken Kabobs

This quick and easy recipe will be a hit for your summertime cookouts. Little bit of prep makes for tasty results.

Here’s What You’l Need:

  • Skewers - Roughly Two Skewers per person (soak in water for at least one hour prior to assembly)

  • Chicken Thighs - Split three chicken thighs between two skewers (Multiple per your group)

  • Pineapple - One whole, chopped into 1 inch chucks

  • Zucchini - Chopped into half inch thick rounds then cut in half

  • Onions - Cut into chucks

  • Salt and Garlic Powder - few shakes

Marinate the chicken, onion and zucchini in coconut aminos for at least an hour in a sealed container leave the pineapple out of the mix. Give it a good shake every now and then to make sure everything is getting nice and marinated. It’s best if you can actually prep this part the night before, just makes for more flavor! Once you’re ready, load the skewers, alternating all the ingredients. Sprinkle with salt and garlic powder and you’re ready to cook!

You can either barbecue over medium heat or pop in the oven. I prefer the oven, I place all the skewers on a cooking rack over a baking sheet. Make sure to rub a little olive oil on the rack to keep it from sticking. Bake at 300 degrees for about 40 minutes until the internal temp of the chicken is 165 degrees.
