Halibut Burgers are a great way to use any extra fish leftovers in a new way. I am not a big leftover fan in general so I typically default to repurposing. I started this recipe with raw fish, but if your leftovers are already cooked you can easily use that too with a few tweaks.

Here’s What You’ll Need

  • Halibut Filet or any fish of choice- roughlying 1 LB (makes 8 patties)

  • Red Onion - Half Onion, diced

  • Capers - 3 TBSP

  • Fennel Fronds (or dill) - 1/4 Cup finely chopped

  • Sea Salt - 1 TBSP

  • Garlic Powdee - 1 TBSP

  • Caesar Dressing - 1/4 Cups (can be subbed for Balsamic Vinegar

  • Olive Oil

Take the raw fish and chop finely, mix in all of your other prepped ingredients.

  • If you're using already cooked fish, take the other ingredients and give them a quick pan fry with a drizzle of olive oil. You won't cook the entire patty as long so you want to get those flavors going first.

Once you’ve mixed everything together I recommend letting it rest for at least one hour. Just gives all of the flavors a really good chance to marinate together.

But sometimes, no body has time for that… so next step!

Mold into patties! I take roughly a little over 1/4 of a cup and start balling it up. Since there is no binding agent you are creating it by really molding the mic with your hands. Once I have a nice compact ball, I gently press the middle to form the patty, they should be about 3 inches across and 1/2 thick. Anything bigger is a bit hard to keep in tacked. Repeat till you’ve made all the mix into patties.

In a fry pan over medium heat drizzle a few TBSP of olive oil OR lard if you keep that on hand.

Carefully place the patties in the pan, you may have to do a few rounds as you don’t want to crowd them. Sear on one side for a few mintues then cover for 5 minutes on medium/low heat. Gently flip the patties ( I use a spatula fork combo) Sear again for a mintue then cover for 5 mintues. DONE!

  • PRE-COOKED FISH WILL ONLY NEED A FEW MINTUES OF COVERED COOK TIME.

I then did a lettuce wrap with my sliders, dressing it with mashed avocado, red onion, pickles and plain coconut yogurt. SO GOOD!
