I can’t even handle how delicious this is. Adding it to my top recipe list for sure! It’s a bit labor intensive BUT well worth it on a special night. My new secret ingredient I’m in love with, SAFFRON!

Here's What You'll Need:

  • Prawns - 1lb Cleaned

  • Bacon - 2 Pieces Thick Cut

  • Carrot - 3 large, skins removed, chopped

  • Artichoke Hearts - Raw, chopped

  • Capers - 2 TBSP

  • Minced Garlic - 2 TBSP

  • Orange Juice - 1/2 Cup

  • Lemon Juice - 1/4 Cup

  • Saffron - Large Pinch

  • Hot Water - 1/4 Cup

  • Sweet Potato Noodles - One Bundle

  • Spinach - One Large Handful

  • Olive Oil - 1 TBSP

  • SEASONINGS - Salt

In a large pot, get water boiling. Add in the carrots and artichokes for a few minutes. In another fry pan start to brown the bacon, garlic, olive oil, capers.

Add the Saffron to the hot water to create some “saffron juice” and let steap.

Once the carrots and artichoke have softened a bit, scoop out the veggies and add to the bacon mix. Add the Sweet Potato Noodles to the already boiling water and cook until soft.

Meanwhile, mix the saffron water into the veggie, bacon mix and give a good stir over medium heat. Then add the orange and lemon juice, and shrimp, stir! Add a good shake of salt and turn down the heat a bit to let flavor meld.

Strain the Sweet Potato noodles and add to the shrimp veggie mix. I took it one more step and cut up the noodles so they were more rice like, but up to you!

Give your mix a taste! Feel free to add in a little more seasoning to taste. I then added the spinach in, gave a little toss and serve! The saffron gives the veggies and amazing zing! Definitely a great way to mix up the flavor palette.
