Coconut Basil Prawns

AIP COCONUT BASIL PRAWNS

This dish is so incredibly flavorful. If you’re a fan of Thai food and missing it desperately this will hit the spot. Pretty basic ingredients but there are some cooking tips to watch out for to make sure you’re bringing out all of the flavors.

Here’s What You'll Need:

  • Prawns - 1lb, deveined and shells removed

  • Lemon Juice - 1/8 Cup

  • Coconut Aminos - 3 TBSP

  • Olive Oil - 2 TBSP

  • Minced Garlic - 3 TBSP

  • Yellow Onion - thin cut on mandolin

  • Coconut Cream - one can

  • Thai Basil - 10 leaves

  • Salt

All of the ingredients are going to be added into a large fry pan and stirred together at room temp. Allow this to sit and marinade as long as possible. I get all of this going, prep whatever veggie side dish and get my pasta water going while this sits. Once the pasta water is going, I add in my sweet potato noodles and then start to cook my shrimp sauce on medium high. This cooks really fast, only takes a few minutes for the prawns to cook through. Once the prawns are cooked I give the sauce a taste and add in more lemon juice, coconut aminos and salt to taste. You want it to be pretty rich as then pasta soaks up a pot of flavor. Make sure to keep an even heat going on it as you dish up your pasta and veggies. Pour the hot sauce and prawns over top of your sweet potato noodles and you’re set!
