Peach Mango Salsa
With Football Season upon us I’ve discovered I can eat…none of it. Insert crying face….okay I’m back. I’ll just create something myself…insert smile.
Peach Mango Salsa
Very easy to prepare and keeps extremely well. The longer it sits in the fridge the better it gets. You can serve as salsa or as a topping over your favorite protein.
Here’s what you’ll need:
One Cup Chopped into small cubes of each of the following
Peaches - slightly firm
Mango - ripe but not squishy
Onion - Preferably Walla Walla Sweet but any yellow onion will work.
Parsley - fine chop - 1/2 Cup
Cilantro - fine chop - 1/4 Cup
Olive Oil - 1/2 TBSP
Red Wine Vinegar - 1/2 TBSP
Grey Sea Salt - 1/2 TBSP
MIX and ENJOY!
