As part of my Holiday Dishes, these Maple Bacon Carrots are super easy, super tasty and can be made ahead for a great freezer meal prep idea, although I recommend keeping them in the fridge. I absolutely love the holiday’s from the decorations to the food I’m definitely the person who would keep their lights up all year if people weren’t so judgy…..ugh rude. Ok, back to cooking.

Here’s what you’ll need,

  • Baby Carrots - 2 lbs

  • Maple Syrup - 1/4 Cup

  • Coconut Aminos - 1/4 Cup

  • Onion - Half large yellow onion, fine diced

  • Bacon - Uncured, Sugar Free, 2 Thick Cut Slices

Dice cut the onions and bacon, I make the bacon cuts a little bit bigger, but you do you. Combine all ingredients into a bowl and let rest. This can then be packed up and kept to marinade over night or go straight into the oven.

Once ready, put into a 9x9 pan and it will go into the oven at 300 degrees for one hour. You can cover with foil but I like my carrots to get a little crispy so I leave the pan open and just give them a good stir when they come out of the oven.
