AIP Pasta Salad
I love when I find amazing products. I recently purchased the Cassava Pasta line from Jovial Foods and I’m obsessed. I first discovered Cassava on a trip to Brazil and was like how to we miss the boat on this?? The bread is amazing…..but I digress. So in order for this dish to be AIP you’ll want to check out their products. There are some great GF pastas you can use, but I have yet to find another pasta like this that’s totally AIP. Open to recommendations!
For this dish, it’s very easy to make ahead of time then let chill in the fridge a few hours before you’re ready to serve.
Here’s What You’ll Need:
One Box of Jovial Cassava Fusilli
Black Olives - 4 oz ( I recommend Field Day)
Chomps Sea Salt Beef Sticks - 2 chopped in rounds
Caesar Dressing - One Cup
Capers - 2 TBSP
Parsley, Green Onion and Mint - 2 TBSP Each, finely chopped
Basil Leaves - small bunch of whole leaves
Salt to Taste
Cook the pasta per instructions, drain then immediately cool with cold water and ice to stop the cooking process. Once the pasta has cooled you just need to mix everything together. Give it a taste and add a little salt if needed. Best to let it rest in the fridge for at least an hour before you serve. I placed some small basil leaves on top before serving.
