Blood Orange Chicken
The easy verses WOW factor on this dish is off the chart.
Here’s What You’ll Need:
Chicken Thighs - Skin On
Blood Oranges - About 4
AIP Seasonings and Olive Oil
That’s it!
Clean and prep the chicken thighs. Place in oven safe dish and do a light drizzle of olive oil and season. I use sea salt, garlic powder and AIP Italian seasoning.
Next I cut just the tops off of the oranges and squeeze the juice over the chicken. Take the oranges and cut into rounds about 1cm thick and place over the chicken. Pop in the oven at 300 degrees for one hour. This is my trick, cooking chicken low and slow makes for extremely tender juicy chicken. I always check that my internal temp is over 165 degrees then I pop the broiler on for a few minutes to crisp up the skin. Serve with your favorite AIP veggie side dish.
