Who loves easy dinners???? Your hand should be up, yes you… This is so fast, so fresh you’ll have to make up a story about how you spent hours making it so you can go steal some “me" time. Go ahead, I won’t tell…

Here's What You'll Need:

  • Prawns - cleaned and deveined (5 per skewer, 2 skewers per person, now do some math)

  • Coconut Aminos - 1/2 Cup to 1 Cup depending on how many prawns.

  • Ginger - 2 tsp powdered (or fresh grated)

  • Cilantro Sauce (This is extra but great for adding flavor)

  • Pineapple Chucks - 1 Cup

  • Lime Juice - 2TBSP

Now….this gets tricky…ready….place all of the clean prawns into a bag, add in enough coconut animos the give everything a nice coating. Add ginger and squeeze the air out of the bag, shake! Now the marinate, at least an hour, but can go overnight too!

Now, you can cook these a few ways. I placed five on a skewer and roasted them over an oven rack and baking sheet for 15 minutes at 350 degrees. But these can just as easily be pan seared or barbecued. You’re looking for the prawn to curl into a gentle C, but not super tight! Once down I plated with some pineapple I had tossed in lime juice and some of my Cilantro Garlic Sauce. You can pair with your favorite veggie side to complete your meal.
